i think i have the 24 hour flu. it hit last night around 7 and i'm starting to feel better now. but holy yuck! i've never been so sick. my friends have told me their horror stories where "stuff" would come out of both ends at the same time. i didn't think that was possible until last night. i was using the toilet, while leaning over the bath tub puking. get the picture? awful!
this is my first experience being really sick while married and i'd give tanner an A+
he rubbed my back, got me gingerale and crackers. he even made me jello and tomato soup. AND he made fajitas for brooks, cristi, and himself for dinner. i was quite impressed. i sure do love him.
after all this craziness, i could go for some of this broccoli soup i made a few weeks ago. i'm sure it sounds appetizing to you as well after hearing how sick i was.
this was a favorite childhood dish of mine. i was your weird child who loved vegetables.
and all kinds of vegetables.
got this recipe from pinterest. thank goodness for pinterest when mom isn't available with her own recipes.
1/4 cup butter
1/2 chopped onion
1 clove garlic
1/4 cup flour
1 cup half-and-half
1 cup milk
2 cups chicken stock
1/2 lb fresh broccoli, chopped
1 cup carrot, shredded and chopped
1/4 tsp nutmeg
1/4 tsp cardamom
8 ounces grated sharp cheddar cheese
4 ounces grated Colby jack cheese
Salt and pepper to taste
Sauté the onion and garlic in the butter over medium heat. Add in the flour, stirring constantly. Add in the half and half, milk, and chicken stock. Bring to almost a boil.
Add the onions back in, along with the broccoli and carrots. Simmer on low heat for about 20 minutes.
Season the soup with the salt, pepper, nutmeg, and cardamom. Stir in the cheeses (and you can play around with the amounts; use however much or little you like) and let simmer for 10 minutes longer before serving.
